Ingredients:
- 2 pounds of ground beef (80% lean, 20% fat)
- Salt and pepper to taste
- 8 slices of Swiss cheese
- 8 slices of rye bread
- 4 tablespoons of unsalted butter, softened
- 4 tablespoons of Dijon mustard
- 4 tablespoons of mayonnaise
- 1 small onion, thinly sliced
- 2 tablespoons of vegetable oil
Instructions:
- Preheat the BBQ to high heat.
- Divide the ground beef into 8 portions and season with salt and pepper.
- Form each portion into a thin patty that’s slightly larger than the bread slices.
- In a bowl, mix together the butter, Dijon mustard, and mayonnaise to make the spread.
- Spread the mixture on one side of each bread slice.
- Place 4 patties on the grates of the BBQ, and cook for 2-3 minutes on each side or until the desired level of doneness is reached.
- Place a slice of Swiss cheese on top of each patty.
- In a separate pan, heat the vegetable oil over medium heat and sauté the sliced onions until they’re caramelized.
- To assemble, place the patty with cheese on one slice of bread and top with caramelized onions.
- Top with another slice of bread, spread side facing out.
- Place the assembled patty melt on the grill, and cook until the bread is toasted and the cheese is melted, about 2-3 minutes per side.
