Ingredients:

  • 2 pounds of ground beef (80% lean, 20% fat)
  • Salt and pepper to taste
  • 8 slices of Swiss cheese
  • 8 slices of rye bread
  • 4 tablespoons of unsalted butter, softened
  • 4 tablespoons of Dijon mustard
  • 4 tablespoons of mayonnaise
  • 1 small onion, thinly sliced
  • 2 tablespoons of vegetable oil

Instructions:

  1. Preheat the BBQ to high heat.
  2. Divide the ground beef into 8 portions and season with salt and pepper.
  3. Form each portion into a thin patty that’s slightly larger than the bread slices.
  4. In a bowl, mix together the butter, Dijon mustard, and mayonnaise to make the spread.
  5. Spread the mixture on one side of each bread slice.
  6. Place 4 patties on the grates of the BBQ, and cook for 2-3 minutes on each side or until the desired level of doneness is reached.
  7. Place a slice of Swiss cheese on top of each patty.
  8. In a separate pan, heat the vegetable oil over medium heat and sauté the sliced onions until they’re caramelized.
  9. To assemble, place the patty with cheese on one slice of bread and top with caramelized onions.
  10. Top with another slice of bread, spread side facing out.
  11. Place the assembled patty melt on the grill, and cook until the bread is toasted and the cheese is melted, about 2-3 minutes per side.
  12. Serve hot and enjoy!
