Ingredients
1 tablespoon unsalted butter
1¼ cups finely chopped yellow onion (from 1 large onion)
¾ cup chopped red bell pepper (from 1 medium pepper)
1 tablespoon minced garlic
1½ pounds ground chuck
1 (10-ounce) can tomato puree
1 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon light brown sugar
1 tablespoon chili powder
¾ teaspoon kosher salt
4 sesame seed hamburger buns
Hot sauce (optional)
Directions
Step 1
A campfire burner or a BBQ grill should be heated to medium-high (between 375° and 400°F).
Step 2
On the camp stove or grill, melt the butter in a 12-inch cast-iron skillet.
Step 3
Cook the onion, bell pepper, and garlic in the skillet for about 10 minutes, turning periodically, until tender. Vegetables should be taken out of the skillet.
Step 4
Add the beef to the skillet and cook, turning frequently, for about 5 minutes, or until the meat is crumbly and no longer pink. Refill the skillet with the veggie mixture.
Step 5
Bring to a simmer after adding the tomato puree, ketchup, Worcestershire, sugar, and salt. Reduce the heat to medium-low (between 300 and 325 degrees Fahrenheit); cover the pan and cook for 10 minutes, stirring regularly, until well cooked.
Step 6
Divide the mixture evenly among the hamburger buns. Serve with the hot sauce, if desired.
